Dinner for one

My husband, who is in the Navy, is currently deployed. I only mention this because it plays an important role in today’s blog. When he is away I find I sometimes have some pretty unorthodox meals. Oh I can cook and I do at times, just the other night I fixed a meatloaf, yet there are times like last night where I have little desire to cook. When those times appear I find myself rummaging through the fridge and the cabinets until I find something that appeals to me. This is the reason why dinner last night consisted of three plain ears of corn on the cob, cold as I had cooked it the night before; half of a watermelon and a small bowl of potato chips. I have no small children at home and Oliver was well fed with his usual premium dog food so no authorities need to be contacted. Most of the time I try to be a very conscientious eater. I try not to consume foods with added preservatives, rarely fry food (I know that really goes against my southern upbringing), and try to eat fresh whenever possible. I also eat gluten free for health issues, so as I was munching my way through my third ear of corn, I was actually proud of the fact that it was not drenched in butter. During the early years of my marriage, when I had “episodes” like this, my go-to food was usually a can of whole kernel corn and a whole stick of butter. Now days when the doctors tell me I have high cholesterol I just look at them with innocent eyes and say “oh really, I must have inherited that.”  Considering the alternatives, I really had a healthy dinner last night. It does make me wonder though, what are some of the weird things you, the reader, have eaten in the name of dinner. Do you also have “episodes” or are you always in control?
